Bagna Calda Recipe (garlic and anchovies, baked in olive oil! Yum!)
Garlic is one of my favorite foods. Sometimes I'll eat three BULBS in one sitting! The best way to prepare it, in my opinion, is roasted outside on the BBQ grill! Here is how I grill it; Slice the top 20% or so off of the top of a half dozen bulbs (or however many you wish to cook) Pour a bit of olive oil into a bowl, and roll the bulbs around in the oil so that they become well saturated (the oil keeps them from burning). I usually open a can of anchovies, and put a couple on top of each bulb. Wrap the bulbs in two or three layers of aluminum foil, and cook them on the BBQ grill for a half hour or so, along with whatever else you are grilling. Turn frequently. Enjoy!!!
Another great way to grill it is to peel about three or four
bulbs worth of cloves (after microwaving each bulb for 10 seconds to make them
easier to peel). Chop the bulbs into halves or quarters and grill along with
onions, peppers, tomatoes, potatoes, or whatever, maybe along with some meat,
on one of those grates with the holes that are used to sauté veggies
on the grill. Use high heat, lots of seasonings, and stir frequently. MMMMM
good!
